The 150,000 Btu/hr input oven was put through its paces. All systems functioned well. No safety hazards in the unit itself were observed: The gas controls are a Honeywell Y86G electric ignitor, which is a proper selection for this natural draft oven. The 150,000 Btu/hr donut fryer was operated briefly. A full test could not be performed, as the fryer was empty. This unit has a standing pilot, manually lit. All burners lit properly when tested. The controls on the donut fryer are suitable for the application. The bakery's provisions for combustion air are not satisfactory, as they rely entirely upon the operation of a make-up air blower. The blower is not interlocked with gas controls. Page 1 of 2 To consider this installation to be safe, I would recommend the following: 1. Interconnect gas to two hood -vented appliances with range exhaust fan. Reference: UFIIC'79, Sec.917(c), °Interlock Controls.* When the ventil- ating hood or exhaust system is equipped with power means of exhaust, the appliance control system shall be interlocked so as to permit appliance oper- ation only when the power means of exhaust is in operation.° Note that neither of the two hood -vented devices have automatic ignition. Thus, new interlocking automatic gas shut-off valves will have to be in main gas lines (but not pilot gas lines); or units will have'to be modified for automatic pilots. 2. Provide permanent combustion air openings to bakery (for those times when make-up air &/or exhaust fans are off, i.e. for those gas burning devices which are not hood -vented). Reference: UNC'79, Sec.608, "Properly designed permanent facilities to supply ample amounts of outside air to permit complete combustion of the fuel shall be provided. Where any portion of the combustion air is taken from the space in which the fuel-buring appliance is located, a permanent opening to the outside shall be provided having an area at least .5 square foot per 1,000,000 Btu/h input rated at the altitude of installation. Adequate ventilation of the boiler or furnace room shall be provided to pre- vent the development of an explosive atmosphere should leaks occur. The ventilation provided shall be so designed as to maintain atmospheric or pos- itive pressure at all times.° 3. The natural draft vented appliances should not be allowed to fire when the hood exhaust fan is on and the make-up air fan is off, as a strong negative condition was observed to exist (as might be expected) under this condition. Although the two fans are interlocked with a relay, it is none - the -less easy for the operators to turn off the make-up air fan (while the exhaust fan continues to run) using a circuit breaker. Indeed, the electri- cian demonstrated same. To accomplish this, it is recommended that both fans be put on a common circuit. Reference: UMC'79, Sec.2003(i), *Makeup Air. Each room provided with an exhaust system shall have air supplied to the room equal to the amount of air to be exhausted. Makeup diffusers shall be located to prevent a short-circuiting of air furnished to the exhaust system. Windows shall not be used for the purpose of provideing makeup air. First, a warning against the most common of all ventilating errors: the condition of ncbative pressure, which simply means more air is being exhausted than is being replaced. It happens especially in kitchens and bake shops with powerful exhaust fans and no causing pressure inside the room to be l than outside. It can cause personal discomfort and extreme oven malfunction. Draft is reversed, pull- ill- downward rather than upward, resulting in poor baking; improperly burned gas, heat baCkUp c�using' damage to controls, even explosions. Com- pensating air MUST be brought into the room.- (American oom:(American Gas Association offers, for 50¢ a copy, an excellent pamphlet on this subject, titled "Commercial kitchen Ventilation.") TOP VENTING. Cheaper ovens on the market ob- tain ventilation and draft from a simple hole in top of oven chamber. Even when top -vented ovens have baffles to restrict the straight -through flow of heat, moisture and steam, -they still have characteristically dryer bake, greater product shrinkage and higher fuel or power consumption. Middleby-Marshall ovens have a sophisticated/ tlnnhle-vent system. CUE ere are two vent outlets at�top,�nefor operatorortthe other, leading of oven chamber, for corn us r COOLING_ VENT. On M -M ovens, the vent outlet to- ward front (see sketch) connects to oven loading door. It cools door when closed, and prevents heat blast in operator's face when door is. open. When practical, this outlet should be vented separately from combustion outlet. When.impractical, they can be elbowed together, but connection should be above the restricting damper. Flow from this should be unrestricted for maximum operator comfprt. / COMBUSTION VENT. Cheaper ovens get secondary air as best they can, usually from air leakages at burner or loading doors. M -M ovens have exclu- sively designed secondary air boxes fabricated from steel, providing a positive source. The ovens are then vented from slots near bottom of oven chamber. Air is drawn through flues concealed in oven walls, across top of oven to center top outlet. This outlet, should be dampered to .04 to .06, as measured by draft gauge in top stack outlet, in a direct fired oven, and about .06 to .08 in indirect - fired ovens. There is a damper in top of oven c}1am.bcr .;.ening directly into the outlet, Which Is kept closed except when quick cooling of oven is wanted.
